Miyoko Schinner has been a vegetarian for over forty years and vegan for over half of that time. She is the author of The Now and Zen Epicure and Japanese Cooking:Contemporary and Traditional.�Miyoko, who has an on-line, whimsical cooking show called Miyoko's Kitchen, has been teaching, cooking, and writing about vegan foods for over thirty years. Great uncheese book

This book is wonderful, but be prepared to have carrageenan powder, xanthan gum (not guar gum), tapioca flour, and agar powder on hand. These recipes are time consuming, but delicious and you may not be able to start these right away unless you have most of these products. In addition, you may wish to make homemade rejuvelac and yogurt ahead of time.
Aside from this, the recipes are delicious and we have thoroughly enjoyed the ones we have tried. The sharp cheddar is very good and that is the one we started with. It takes more than the 3 to 5 minutes (at least it did for me) to cook til completion, but once it comes together, it is worth the effort. I'm determined to fix the mozzarella tonight for pizza. I'm sure it will be equally as good. If not, I'll be back to add to this review. It's a good book and a lot of work went into the creation of these wonderful recipes. Oh BTW, there are different kinds of carrageenan and you may wish to visit some of the resources that the author has listed in the back of the book. Amazon does not tell you the difference between the different varieties.

Worth the effort!

There are a few points I think it would be good for anyone considering this book to realize:

-This is not a recipe book. This is a cheese-making book with some recipes for how to use the cheeses at the end. The difference? Real cheeses are cultured and take time. The same is true of real dairy cheeses, which most of us have never tried making before. Many vegan cheezy recipes in other cookbooks try to use flavorings to make them taste like regular cheeses so they are made quickly. Except for a chapter of almost-instant cheeses, don’t expect to make your favorite cheese for dinner tonight. Understanding this will set the expectations for this book.

-Culturing will also lead to hits and misses as you learn how to do it. My previous experience with culturing before this was with sourdough, which has been invaluable when starting this book. The first few loaves of sourdough I made were bricks and tasted horrible. The ambient temperature, humidity, and the culture that you start with (the rejuvelac or yogurt for the cheeses) will all affect how your culturing goes. Do not tightly close the cultures. Living organisms release carbon dioxide just like we do, and your cheeses may expand in the container, and the pressure of the gas may even make the container break. If you are culturing a thick mixture and it never expands, you probably need to wait longer. I suspect some people who did not find the cheeses to be flavorful were not successful in their culturing. Live and learn.

-The ingredients are important and something that I think needed to be better emphasized in this book (and is emphasized well in The Nondairy Formulary). Only use uniodized salt, as iodine can prevent culturing. Only use filtered water, the chlorine from the tap can prevent culturing. To be safe, only soak the nuts with filtered water too. Rather than buying water, I keep a pitcher of water in the fridge. If it sits for a few days, the chlorine dissipates. For the yogurt, only use soymilk or almondmilk without additives (i.e. soybeans or almonds + water, nothing else), the additives can affect how your cultures proceed. Also, you are more likely to have success with the yogurt using soymilk (versus almond milk). Don’t use nuts that have been sitting around for a long time, if they don’t taste good raw, they won’t taste good in your cheese.

-If you have a nut allergy, do not buy this book. A better one for you would be the nondairy formulary. However, if you don’t have a nut allergy, I find Miyoko’s book to be superior and like that the nuts make the cheeses nutritious.

-If you go into drinking soymilk thinking that it’s going to be the exact same as dairy milk, you’ll be disappointed. But if you drink it thinking that it could be its own tasty beverage, then you can like it. Same for these cheeses. They are not going to fool anyone into thinking that they are dairy cheeses (unless they are a spread or sauce that is very strongly flavored). The texture is different and in some it is possible to notice a slight nutty taste (which I like). But they are tasty in their own right and do have flavors like the flavors of the dairy cheeses.

Other tips:

-It is possible to reduce to the time associated with these recipes by using store-bought yogurt and rejuvelac, and nut butters (look for raw or unroasted, as the roasting will change the flavors). However, I found the yogurt and rejuvelac with quinoa to be super easy and it keeps for awhile. I love this yogurt recipe so I don’t plan on buying store bought yogurt anymore. This yogurt is also clean eating (Versus store bought vegan, which usually has additives to firm it up more). If it is not thick enough for you, strain it in cheesecloth overnight and it will be Greek style (or what Miyoko calls yogurt cheese).

-It is possible to get away without a high speed blender if you have nut butters. Sprouts supermarket here carries store-made cashew butter, and Artisana brand is available at Whole Foods and on Amazon also carries it. Note that the nut butters themselves can be expensive, but it lets you get away without a blender that costs a lot more. For nut butters, replace 1 cup whole nuts with � cup nut butter.

-Don’t feel like you have to use cashews. I think the reason cashews are the preferred nut is because they blend the easiest. I find the cashews a little too sweet for some of the milder cheeses. I love using Macadamias in the yogurt (though they are even more expensive than cashews). A cheaper alternative is almonds, though you will probably need a high speed blender for this (unless, if anyone knows of a raw almond butter-do NOT use roasted! the flavor will be different). Brazil nuts may also work. Go for milder nuts if you experiment.

-I personally boil the nuts before using them in these recipes. A lot of my nuts come from bulk bins and I worry about insect larvae. I have found that boiling does not affect the recipe. Just don’t roast them. Nuts roast at a higher temperature and can alter the flavor quite a bit.

-It is possible to avoid using carrageenan if you are worried about it. Miyoko explains her use of carrageenan and that it helps the cheeses melt better. I have been using agar and it works alright. 1 Tbsp carrageenan = 2 Tbsp agar powder = 6 Tbsp agar flakes. I’d recommend the powder over the flakes if you don’t blend the flakes, the flakes do not always dissolved in thick solutions.

-I got this book for Christmas and so far have made rejuvelac, yogurt (twice, once with cashews and once with macadamias), cream cheese, yogurt cheese, sharp cheddar, meltable muenster, nut parmesan, and tofu ricotta. I have made cashew cream previously and it is a great base to sauces or desserts that you might otherwise use dairy cream for (but don't expect it to whip, use coconut cream for that). All have turned out well but again, don’t think it’s going to be exactly the same as their dairy counterparts. I currently have air dried parmesan in the works. I noticed that some other people have had issues with this and it does seem like the drying may be taking longer than the book suggests but I am optimistic. Tasting the mixture before it started air drying it already tasted amazing. Next up is camembert, gruyere, and provolone. Looking forward to trying all the cheeses in this book!

Fantastic!

I love to cook, and I have been a vegan for decades. This book is, hands down, the greatest surprise that I've had in the kitchen for a very long time. Wow! Where do I start? I made the rejuvelac, which is a necessary ingredient for many of the recipes, the day that I received the book. (I started it that day.) Super easy. I also made the yogurt immediately thereafter. Again, super easy. Very good results. As for the cheeses, I've made fresh mozzarella, sharp cheddar, basic cashew cheese, chevre, and marscapone so far. These are all very true to taste (yes, I remember the taste of dairy cheese), very easy, and really just in a league of their own. I should mention that I never buy "supermarket vegan cheese," as I do not care for the taste of any of the brands at all. The cheese made from the recipes in this book just knocked my socks off. My husband's too. Goodness! The book is simply fantastic. I can't wait for her next book.

The book includes a self-contained treatment of the probability theory needed for stochastic calculus, including Brownian motion and its properties. Easily the best quantitative finance book ever made.

Every time I tried any other finance literature, I end up realizing Shreve's book is the only one that tell you all the truth. After analyzing some other alternatives out there, one should wonder whether all this math are necessary or not. Hull's and Wilmott's books give you a good amount of intuition and honest rules in order to avoid the fundamental theory behind stochastic calculus. Kerry Back and Thomas Mikosch, on the other hand, do not fear showing the math, but instead they give much more insight about the pricing theory without proving the most technical results. Finally, Shreve's books will tell you everything you need to know in order to master stochastic calculus. It's clear, very well written and cover every tiny subtle aspect underlying the theory. The only issue is: This is a Math book that frequently remembers it's solving finance problems, but it never forgets it's doing serious math.

So, in my opinion, if you have strong knowledge in calculus and a good amount in probability, you should definitely try Shreve's books. Depending on your math background, it will hurt more or less. It hurt me a lot reading this book, but it is like any classical literature. The more you read, more you understand.

And if you don't love math, books like Hull's will give you enough for your finance works.

I believe that the content is really nice, but the book itself...

I'm pursuing one of those MS degree in Financial Engineering right now, and I bought volume 1 and volume 2 of this textbook together. I used only volume 2 two semesters ago, as a helpful reference. And I'm reading both of the books very thoroughly this semester everyday. These books are very well organized and explain intuitively, to the extent that it is very helpful for those whose background doesn't come from mathematics or engineering. (But don't get me wrong, this book is not at all easy)

My rate is only three because these books are not nice as products. I'm spending 4~6 hours a day with these books, almost 6 days in a week, and it makes me so stressed because it is so hard to hold the book firmly when I should go to look for something from previous chapters. I'm not saying the pages are made of steel, so that I really have to work out, no. But it is still annoying since these books require me to go back to previous chapters and check some formulas once again for the most of the time. Moreover these books never stay opened on the desk. Thus I really had to hold them every single seconds when I was studying. All I wanted is them to be opened as the way I left them on the desk.

So the content seems really awesome, but the books themselves are not handy at all. I eventually made them spring notes, and I'm happy.

Shreve has done a tremendous job in communicating the concepts

Although I work in a major global bank at a senior level I don't use stochastic calculus in my job. My maths and physics background goes back to the 1970s when stochastic calculus was not part of undergraduate studies. Indeed, one usually did stochastic theory at postgraduate level. I have memories of reading Halmos for measure theory, Feller for probability theory, Wiener and others. None of this was easy.

Suffice it to say that there were a lot of abstract building blocks one had to erect first before one could actually do anything useful.

Stochastic calculus is not easy. It is less intuitive than ordinary calculus. The vast majority of textbooks launch into a wall of definitions that seem divorced from the motivation for them. I am always suspicious of authors who do that. It's fine if you are writing for a very specialised audience but I am with Richard Feynman who reckoned that if you can't provide a simple explanation you don't really understand what is going on. In that context read his PhD thesis - it is most readable and understandable.

What Shreve has done - and this is a significant achievement in my view - is to present something that is rigorous enough (and we all know that in this and other areas of mathematics one can go on and on with minute points of detail all in the name of rigour) yet grounds the concepts in something that is understandable.

The simple pedagogical fact of life with this type of material is that there is a large overhead in getting to a particular point and Shreve had done a very good job in getting readers to a good standard without destroying their will to go on!

When one looks at areas of mathematics with much longer pedigrees - and Fourier Theory is an example - there are some extremely good presentations of the theory at both mathematical and physical levels. Elias Stein, for instance, has done some marvellous work in the area. Stochastic calculus is really very young in terms of mainstream appeal. I can recall actuarial subjects I did in the early 1980s that had no stochastic calculus at all in them. All that has changed and I think Shreve's attempts in this area can be improved upon too but this will only happen over time.

My colleagues in quant like Shreve's books so I guess that says something too.

WILLIAM BEIK is professor of history at Emory University. An authority on the social and institutional history of seventeenth-century France, he is the author of Abolutism and Society: State Power and Provincial Aristocracy in Languedoc (1985), which won the 1986 Herbert Baxter Adams Prize of the American Historical Association, and of Urban Protest in Seventeenth-Century France: the Culture of Retribution (1987). He has written numerous articles and is coeditor of the New Approaches to European History series at Cambridge University Press.

I would recommend this book

The central argument seems to be that - absolutism didn’t exist in practice. Which I didn't consider particularly remarkable argument, as often theory falls short of practice.
It appears that the notional loyalty to King (as an absolute ruler) was already established. The book instead charts the efforts to overcome the practical obstacle to the Kings theoretical authority.
There is a focus on the early reforms of Louis XIV.
With original documents the quality of the evidence is very strong, and has incidental value on other points. Notably among the original document was Louise XIV letter to his son on ruling. For someone seeking an academic understanding of the Ancien Regime, I would recommend this book.

For a casual reading, most original documents are easy to read letters/diary entries about some interesting event the author wishes to provide insight into.

Comprehensive book with interseting documents

This books is not a traditional textbook. The author tells you about a certain situation or topic than provides primary documents from various sources showing different sides to that situation (Reformation in the Provinces, Religion, Managing France, The Aristocracy, etc). It's nice to get the eyewitness accounts of the events instead of just having the author tell you about them.

DON'T GO CAR SHOPPING WITHOUT THIS

This book saved me a bundle. And it will again in a year or two when I go through this car acquisition process once again, and then again and again after that for as long as the state grants me a driver's license. So on a return-on-investment basis, this book is one of the best investments I have ever made. Just as satisfying has been how fog-lifting it has been, allowing one to see inside the process that no one really wants us to. Finally, it has raised my credibility with my sons. I'm 77 and they are 47 and 51. For a couple of decades now they have been sure that their dad is somewhat behind the times in almost everything, and particularly when it comes to buying or leasing cars which is a topic about which they are sure they know just about everything. So when I laid my "new knowledge" from this book on them, not only were they unaware of it but they were impressed, and even more impressed after they checked it all out and found it to be rock solid. For me therefore this book has been a ten-strike. I highly recommend it which is why I'm getting a pile of them to give to some of my best friends.

The information in this book was extremely helpful in confirming my and my wife's suspicions that the suggested "below MSRP car pricing" that we received through Consumer Reports and other car websites was not going to be helpful if we wanted to really know what we should be paying for our new Subaru. Mr. Bragg carefully makes the case that manufacturer's have very slowly increased their "invoice pricing" over time as way of of reducing the spread between the MSRP and the price a dealer pays for the car. This slow shifts conceals the actual profit that a dealer realizes through other discounts offered to dealers by manufacturers.

Mr. Bragg also runs an organization called Fighting Chance that publishes current information on individual car pricing. We paid $40 for information on the model of new Subaru we wanted to purchase and used that information to get the car well below the pricing suggested by Consumer Reports and other 3rd party car pricing sites (like Edmunds, American Express, AAA, etc.)

A good primer to the nonsense behind the 'invoice price' scam ....

A good primer on how little the consumer really knows on how much a particular car costs the dealer and how much 'profit' is in the transaction. Almost all pricing guides are based on the 'invoice' price and people try to shoot for that number even though the true invoice price can be many thousands of dollars below that through incentives, rebates, and secret dealer cash. And how 'TrueCar' is nothing more than a feeder website run by and for the profit of Consumers Reports, so they aren't squeaky clean as they present themselves to be.

What the book doesn't tell you is how to actually go about getting the best price, that is something you can probably figure out yourself (multiple dealers vying for your business !), or buy a complete report for the particular car you are considering and the strategy is included in the package. $39 for the first car, $15 for subsequent cars through the FightingChance.com website.

All in all it is worth knowing this information to understand that the invoice price is a scam and not indicative at all of what the car cost the dealer.

Drawing on both English and Spanish sources, this critical study examines the history, method, and doctrines of liberation theology. Sigmund considers the movement's origins in political circumstances in Latin America and provides case studies of its role in such events as the revolution and counter-revolution in Chile, and in the revolutionary movements in El Salvador and Nicaragua. Examining the thought of major liberation theologians, as well as the critical responses of the Vatican, Sigmund shows that liberation theology is a complex phenomenon, comprising a variety of kinds and degrees of radicalism. He discerns a general trend away from the Marxist rhetoric that has often characterized the movement in the past and towards the kind of grassroots populist reform typified by the Basic Christian Communities Movement.

Sigmund sees liberation theology as making positive changes: moving away from Marxist thought and toward a grounding in biblical reflection and interest in democratic processes. His argument is best supported by his analysis of Gustavo Gutierrez but only vaguely supported elsewhere. Still, the book is worthwhile because it is a clearly written historical review of the liberation theology movement and its influence in Latin America. Sigmund's analysis is sophisticated, and though he sympathizes with liberation theologians he takes no sides. He discerns the sound and unsound arguments in the works of the theologians, their American supporters, and their critics. Recommended for seminary and religious studies collections.

Bernard Malamud’s second novel, originally published in 1957, is the story of Morris Bober, a grocer in postwar Brooklyn, who “wants better” for himself and his family. First two robbers appear and hold him up; then things take a turn for the better when broken-nosed Frank Alpine becomes his assistant. But there are complications: Frank, whose reaction to Jews is ambivalent, falls in love with Helen Bober; at the same time he begins to steal from the store.

Like Malamud’s best stories, this novel unerringly evokes an immigrant world of cramped circumstances and great expectations. Malamud defined the immigrant experience in a way that has proven vital for several generations of writers.

A literary classic

Arguably one of the greatest novels of our time (up there with Steinbeck's "Grapes of Wrath" ... Should be a must read from high school through college. This was my third read (over a 30 year span) ... I expect my next few reads to be even more fulfulling.

Assistant is spelled with the letters S.A.I.N.T. [T]

The word "Assistant" includes the letters S.A.I.N.T And, the person who is the assistant herein well reflects Christianity's concepts of sainthood or someone who is "born again."

A simple ground floor grocery man, Morris Bober, lives in a simple second story flat with his wife, Ida, and beautiful 23-year old daughter, Helen. Business is worsening, and while it falls, he meets Frank Alpine - an Italian goyim.

Frank works for peanuts for Morris and manages to raise the business from its ashes. Things begin to look good - but Ida's fears of a goyim living so close to her very Jewish daughter are well deserved.

Frank is not a saint by birth. Frank is an orphan who lived an abusive childhood, and he merely wants to be loved. He practically enslaves himself for Morris - partly to be loved and partly for penance. But, whatever his evil ways were, he is almost devoid of the same after meeting Morris. Malamud probably intentionally chose Frank to be Italian - and incorporates what the Roman Catholic Church associates as "being born again": baptism. Working in the grocery for Morris is Frank's baptism.

What makes this book so fascinating is the concept of rebirth after criminality. Really, criminality's born again Christianity became vogue a decade or decades after publication of this novel (1957) with the 1976 book written by Charles Colson of Watergate fame.

This insightful work on Christianity becomes even more fascinating when one considers the source - a young Jewish writer who grew up in a delicatessen with an impoverished father who is much like Morris. And, the greatest part of the rebirth arises in the end when Italian Frank - learning about Judaism - converts. He is a born again Jew.

The grocery is commonly referred to as a prison which confined Morris and later confines Frank. But, from that prison others benefit. And, most particularly we learn of the goodness of those imprisoned in poverty - something espoused by Saint Francis who is mentioned numerous times in this book.

This is a great story. This is a great book with many layers. And, this book could be assigned to religion students as well as the obvious English or literature students.
